With a sweet tooth the size of Mount Everest, I'm always on the lookout for low-calorie or low-fat desserts that are substantial enough to satisfy my sweet craving but not so substantial that they leave an impression on my hips. An avid fan and viewer of The Biggest Loser, I was very excited to see Curtis Stone on Tuesday's episode featuring his very own '100 calorie cupcake' recipe. This low-calorie cupcake with raspberry cream cheese icing looked very light but also extremely delicious and I just had to have the recipe. Although I haven't tried them yet, I will definitely be picking up the ingredients to give this low-calorie sweet treat a try!

The low-calorie cupcakes featured on the show were said to be only 100 calorie cupcakes, but the nutritional information for the recipe below shows them as only being a mere 60 calories. That's great; it means I can eat two and not feel guilty! However, the recipe yields about 14 cupcakes and I've never seen a home kitchen muffin pan with more than 12 cups, so to avoid having to bake a batch of only two cupcakes, make them a little larger and only make one batch of twelve. The adjusted calorie count would make each cupcake 70 calories; still not bad for a decent-sized dessert.

Low Calorie Cupcake Icing

The recipe above features the ingredients for a banana frosting and the ones on the show had a raspberry frosting (substitute 1 cup of raspberries for the banana) but you can easily substitute just about any other kind of fruit. While both icings sound delicious, I think I will try adding a touch of Splenda to sweeten them up a bit.

To add a tropical twist to your cupcakes, puree some pineapple to mix with the cream cheese and garnish with toasted coconut.

I tried making these and they aren't good. They didn't cook through but were burnt on the bottom. They didn't rise at all and tasted like mushy pancakes.

I followed the recipe exactly. We threw away the batch.

I'm sorry to hear that. I haven't tried them yet, but I think I still will. The ones on the show looked really good. Although perhaps they purposely made them look good?

made these today and they were nasty! not worth the time, money or 100 calories...not sure why everyone on the show liked them.. I was bummed because I was looking forward to a little treat! don't bother making them!

I was so excited to try these...I'd heard they were awful but tried them anyway. A waste of an hour and all the ingredients! I'm throwing them in the trash! I did make the frosting (raspberry) tasty by adding 1 cup powdered sugar and 1 tsp vanilla. Now I'll have to make regular cupcakes to put it on though. I'm all for healthier versions but not when it tastes so bad it's a waste of even 70 calories!

i am no stranger to low-fat, low-cal cooking, and usually things turn out great. i havent found a recipe i didnt like (or that straight up didnt WORK!) on jillianmichaels.com, but these were fing terrible! if i wanted a wheat bagel with raspberry cream cheese...i would just go to the store and purchase one! these are not sweet, not cupcakes, and i am pissed that i wasted 10 egg whites trying to figure out wtf was wrong with this recipe.

do not try these at home. fail!

Okay, so in these cupcake's defense...

I made them! They were GOOD.

Granted, I didn't use the frosting recipe they provided.

But the cakes themselves worked perfectly for me.

They were moist, and soft, and baked completely through.

I don't know why they didn't work for anyone else,

because they worked for me.

The way I made them caused them to be somewhere around 120 calories, but that's with a heaping amount of frosting. If you just spread the frosting on with a knife, it'd be around 90 calories. Also, mine had an almond stuck on the top. (:

I'm suprised this recipe got bad reviews, because they came out perfectly for me!! I made a couple changes though--- i actually used all purpose flour in place of whole wheat (it was the only flour i had), and used blueberry greek yogurt for more flavor.

As for the frosting, I used bluberries instead of banana, and sweetened it with four splenda packets. worked out very well :)

They were freaking disgusting!!!!! DON'T MAKE THEM! I probably should have read the reviews before I did. :/
